Fudgy Walnut Chocolate Brownies

I made these brownies for the first time a couple months ago and I fell in love. With the brownies of course. They were fudgy, chewy, chocolatey and left me with a fully satisfied sweet tooth. They are for sure a healthier version to my classic childhood favorite chocolate brownie dessert. In my opinion, the best boxed brownie mix of all time is the Ghirardelli Triple Chocolate. I always looked forward to taking the Costco size box of this brownie mix to bake on our family vacations. Mixing it in a bowl, adding the water, eggs and vegetable oil and pouring the guey mixture into a greased pan. They came out perfect every single time, with or without vanilla ice cream. And this recipe right here is comparable to the Ghiradelli ones! 

But I am smarter now, not only with my health but I honestly do not crave overly sugary stuff anymore. So a brownie like this, made with real ingredients, tastes so good to me. Not only are these brownies gluten and dairy free, they have almond butter and coconut oil as their fat source. I also use maple syrup and natural raw cane turbinado sugar. A little sweet treat like these brownies are much needed once in a while. Try out the recipe and let me know how it goes.


Fudgy Walnut Chocolate Brownies

2 whole eggs
1/3 cup cocoa powder, unsweetened
1/2 cup natural creamy almond butter
1/4 cup maple syrup
1/4 tsp baking soda
1/2 cup raw cane turbinado sugar (or brown sugar)
1/4 cup dairy free mini chocolate chips
1 tbsp unrefined coconut oil
1/8 sea salt
1/3 cup walnuts

For the chocolate drizzle:
1 tbsp dairy free mini chocolate chips
1 tsp virgin coconut oil

Toasted coconut chips for garnish

1.) Preheat oven to 350 degrees and line an 8x8 inch pan with parchment paper.

2.) Combine eggs, almond butter, brown sugar and maple syrup. Add melted coconut oil, cocoa power, baking soda and salt. Batter should be thick, then stir in mini chocolate chips.

3.) Using a spatula scoop batter into baking pan and bake for 20-25 minutes. Let brownies cool.

4.) In a microwave safe bowl, combine chocolate chips and coconut oil. Microwave for 1 minute, stirring every 20 seconds. Drizzle over brownies and garnish with coconut chips.
