Mango Summer Salsa

Tell me, what is better than a super ripe mango?! Especially in Mexico or on a tropical island. When I made this salsa I imagined eating it on the beach somewhere with a bowl of fresh made guacamole and a few lime wedges. Right?! Delicious.

In reality, when I thought of this recipe idea I was roaming through the grocery store without my significant other (he likes to sprint through the store, I am more of a marathon wanderer when it comes to food shopping, I love to spend my own sweet time there). I stumbled upon a few very ripe mango and had the idea. I love eating raw veggies and any time I can combine them with fruit it makes such a delicious combination.

I ate this salsa with plantain chips and and cucumber slices. I also added it as a side on my salad. I decided I am making this again for the next summer BBQ I attend. It's so versatile and flavorful.

Mango Summer Salsa

Yield: 3 cups, 10 servings


2 each        Mangos, peeled and chopped

1/4 each     Red onion, finely chopped

1 each        Lime, squeezed for juice  

3 each        Roma tomatoes, chopped

1 handful   Cilantro, washed, de-stemmed and chopped

Salt and pepper to taste


Method of Preparation:

1.) Chop all vegetables into small pieces and combine into a bowl. Peel mango and shop into small chucks. Season with fresh lime juice, salt and pepper. Enjoy!
