Kale Lemon Pistachio Salad

I love a good summer salad. Actually I am obsessed. When it's so hot outside I stay away from cooking indoors and tend to try to load up on fresh fruits and veggies. Any time I can make an excuse for adding various fruits and vegetables AND nuts into my salad, I am into it. Plus a little bit of fresh squeezed lemon?! Yes please.

Whenever I go to the grocery store and day dream about all of the delicious recipe possibilities there are out. And I often find myself lost in the produce isle on Pinterest looking at recipe ideas. Anyone else? I feel like it is my life mission to not make Kale taste bitter so anytime there is an opportunity to do this I jump on it.

I also hate salad dressing, with a burning passion. Whenever I go out to eat I ALWAYS ask for it on the side and it definitely gives me anxiety when the server ignores this request and gives me a slimy, overdressed salad. Ew, no thanks. But this salad dressing is a game changer because it literally has like 5 ingredients, all fresh with delicious healthy fats. The honey lemon I used was actually a party favor table gift from my cousin's wedding last weekend. Of course this recipe doesn't need lemon honey but it was a great addition to the already lemon flavor.

This salad also took me like 10 minutes to whip up- so fast! I don't like to spend a lot of time cooking so efficient recipes like this are perfect. Also, there are amazing healthy fats, omega 6s with the olive oil and pistachios. And a ton of fiber with the two different types of crunchy kale and other green veggies. I just want to reiterate again, there are no rules when it comes to cooking. Add or subtract any of these ingredients if you aren't feeling it.

Kale Lemon Pistachio Salad

Yield: 6 servings


1/2 cup              golden raisins

1 each              lemon juice + zest

1 tbsp              lemon whipped honey

1/4 cup           apple cider vinegar            

1/4 cup           olive oil       

1/2 cup          pistachios

1/2 cup         parmesan grated cheese

2 each          scallions, chopped

1/2 bunch    cilantro, chopped

1 bunch       kale, washed + de-stemmed 

1 bunch       dinosaur kale, washed + de-stemmed 

salt + pepper (to taste)


Method of Preparation:

1.) Rinse all veggies and fine chop them. Massage the kale gently in a large bowl before adding cilantro and scallions. Add in cheese, raisins and pistachios. Season salad with salt and pepper.

2.) In a blender or food processor, add lemon juice, lemon zest, olive oil, apple cider vinegar and honey. Season to taste with salt and pepper.

3.) Mix dressing into salad and enjoy!
