Gluten Free Ice Cream Sandwiches

Can we take a moment to acknowledge how delicious ice cream sandwiches are?! Especially with homemade gluten free chocolate chip cookies? Yes please, ALWAYS. I remember eating the generic store bought ice cream sandwiches from our Market Basket grocery store chain on the East Coast. Back then, I thought those were the best ice cream sandwiches on Earth. I remember eating them outside after a long summer day in the sun. So good. Little did I know, years later as an adult, there would be many more delicious ice cream sandwiches out there.

I made these gluten free chocolate chip cookies for some friends that just had a baby last week. Any excuse to bake! Of course I was game for a gluten free challenge for my friends. I love baking with the Bob's Red Mill Gluten Free Flour because it is so versatile and it's easy to manipulate it into acting like regular flour, from what I have found. It makes for a crumbly, chewy and delicious cookie that melts in your mouth. I also used the Enjoy Life dairy free chocolate chip mega chunks which are another one of my baking favorites. They are semi sweet and add the perfect creamy chocolate flavor without over powering the cookie itself.

Gluten Free Ice Cream Sandwiches 

Yield: 20 Cookies, 10 Ice Cream Sandwiches


2 1/4 cups Bob's Red Mill Gluten Free All Purpose Flour

1/2 teaspoon kosher salt

1 teaspoon baking soda

3/4 cup granulated sugar

3/4 cup packed light brown sugar 

8 tablespoons Kerrygold unsalted butter, at room temperature

2 eggs (at room temperature, beaten)

1 teaspoon vanilla extract

16 ounces Enjoy Life Semisweet Chocolate Mega Chunks

1/2 cup of walnuts (optional) 

1 pint  So Delicious Dairy Free Coconut Milk Cookie Dough Ice Cream 


Method of Preparation:

1.) Preheat oven to 350 degrees F and mix dry ingredients in an electric mixer. Make a hole in the middle of the flour and slowly mix in wet ingredients (included pre-beaten eggs). Fold in chocolate chunks and walnuts. 

2.) Let dough chill for an hour. Line cookie sheets with parchment paper and bake for 12 minutes. Remove from oven and let cool. 

3.) *** If  you are making ice cream sandwiches, let cookies cool and then scoop 1/4 cup of ice cream in between two cooled cookies. Enjoy!
