Chocolate Peanut Butter Coconut Cups

So I first made these chocolate peanut butter coconut cups when I was reverse dieting from one of my fitness competitions. They satisfy the sweet tooth and you can make them in less than 5 minutes. Low carbohydrate and little to no sugar but they are still so delicious, I am into it.

I found these great individual silicone baking cups and they work perfectly for a single serving size. They are also super easy to clean and you can toss them in the dishwasher and they are microwave safe which is a huge plus.

FYI, one of my pet peeves is peanut butter with added sugar. I HATE IT. I don't buy it, I try not to eat it, it just isn't my thing. However, this dessert in particular tends to be a little bit bitter because there isn't any sweet ingredient. So this is probably my only exception for a peanut butter with added sugar.

I will also often split them in half after I freeze them because I like to savor every bite. What can I say? Chocolate and peanut butter are my soul mates. I can't help myself. And with that sprinkle of sea salt and crunchy peanut butter these little desserts are a perfect sweet/salty combo.

 

Chocolate Peanut Butter Coconut Cups


Yield: 1 serving

Ingredients:

1 tbsp          Crunchy Peanut Butter

1 tbsp          Coconut oil

1 tbsp          Cocoa powder

                    Pinch of sea salt

                    Sprinkle of coconut chips

 

Method of Preparation:

1.) Add crunchy peanut butter, coconut oil and cocoa powder to a silicone baking cup and microwave for 20 seconds. Stir and microwave a few more seconds until smooth and creamy. Stir and sprinkle with a pinch of salt and coconut chips. Throw in the freezer for 10 minutes. Enjoy!
