Chia Seed Strawberry Protein Waffle

Waffles are just the best, aren't they?! This was one of those what-do-I-have-in-the-fridge/pantry type of recipes. And you know me, I went searching for the waffle iron and the key ingredients to make a bad ass waffle.

I don't like to do anything 'to the book' you could say so with this recipe I threw together ingredients that are on the healthier side. I always try to add more fiber, and micronutrients to a recipe so the macros are more friendly. With this waffle recipe I added chia, flaxseed and strawberries for more fiber and added in Nutristat Strawberry Silk protein powder.

It is definitely a more on the hearty, less sweet side for a waffle, but delicious all the same. Try throwing some vanilla greek yogurt, peanut butter or honey on it for extra sweetness.

 

Chia Seed Strawberry Protein Waffles


Yield: 1 large waffle

 

Ingredients:

 

1/4 cup                        dry old fashioned oats

1/4 cup                        raw almonds, ground (or almond flour)

1 scoop                       Nutristat Strawberry Silk Protein Powder

1 tbsp                         ground flaxseed

1 ea.                            whole Egg

1 tbsp                          chia seeds

1/2 teaspoon              vanilla extract

1tsp                             baking powder

1 pinch                       cinnamon

1tbsp                          coconut oil

3tbsp                         almond milk

2-3 ea.                      small strawberries, cut into pieces

 

Method of Preparation:

1.) Heat waffle iron and spray with non-stick cooking spray.

2.) Grind almonds and oats (if using whole ingredients). Mix remaining ingredients together and stir completely. Pour into waffle iron. Once waffle iron sets, remove and add desired toppings. Enjoy!

Makes about 1 large waffle
