  • Chocolate Peanut Butter Coconut Cups

    So I first made these chocolate peanut butter coconut cups when I was reverse dieting from one of my fitness competitions. They satisfy the sweet tooth and you can make them in less than 5 minutes. Low carbohydrate and little to no sugar but they are still so delicious, I am into it. I found these great individual silicone baking cups and they work perfectly for a single serving size. They are also super easy to clean and you can toss them in the dishwasher and they are microwave safe which is a huge plus. FYI, one of my pet peeves is peanut butter with added sugar. I HATE IT.…

    I love a good summer salad. Actually I am obsessed. When it's so hot outside I stay away from cooking indoors and tend to try to load up on fresh fruits and veggies.     Berry smoothies are my jam in the summer! I love anything that has peanut butter on it and this smoothie hits the spot with its frozen berries and nutty taste. I used a chocolate peanut butter protein powder that hits the spot. I have been eating them for breakfast or for a post workout snack. And they are truly a great replacement for ice cream. I paired them with my favorite fiber GG Scandinavian crackers. And you know me, I went searching for the waffle iron and the key ingredients to make a bad ass waffle.     I am all about easy snacks on the go that are nutrient packed, and these cashew chocolate chip balls are absolutely amazing!
