• Fudgy Walnut Chocolate Brownies

I made these brownies for the first time a couple months ago and I fell in love. With the brownies of course. They were fudgy, chewy, chocolatey and left me with a fully satisfied sweet tooth. They are for sure a healthier version to my classic childhood favorite chocolate brownie dessert. In my opinion, the best boxed brownie mix of all time is the Ghirardelli Triple Chocolate. I always looked forward to taking the Costco size box of this brownie mix to bake on our family vacations. Mixing it in a bowl, adding the water, eggs and vegetable oil and pouring the guey mixture into a greased pan. They came out perfect…

  • Almond Butter + Berry Crumble

The past two days have been below 40 degrees in Colorado and all I have wanted to do is bake. However, I have a full time job so I can't just stay at home and bake all day long. I am most defiantly a home body so believe me, I would have no problem hanging with our puppy at cooking up at storm. Yesterday I worked a full day, 8 hours at the hospital and then 3 hours at F45 RINO. This was my first time coaching at the new studio and I loved it. The space is almost twice the size of F45 Sloan's Lake, my old home studio…

  • Gluten Free Ice Cream Sandwiches

Can we take a moment to acknowledge how delicious ice cream sandwiches are?! Especially with homemade gluten free chocolate chip cookies? Yes please, ALWAYS. I remember eating the generic store bought ice cream sandwiches from our Market Basket grocery store chain on the East Coast. Back then, I thought those were the best ice cream sandwiches on Earth. I remember eating them outside after a long summer day in the sun. So good. Little did I know, years later as an adult, there would be many more delicious ice cream sandwiches out there. I made these gluten free chocolate chip cookies for some friends that just had a baby last…

  • Healthy Peanut Butter Balls

Peanut butter balls are so nostalgic, aren't they? Every year around the Christmas time I feel like I look forward to these treats. I remember my Mom making them when I was very little and we still make them on an annual basis. This year I flew home to Massachusetts before Christmas and made about 2 dozen of them. Interestingly enough, the next morning I came down to see 8 of them missing. Yes, in the middle of the night, my father came into the kitchen and ate 8 of my preciously made peanut butter balls. Oh well. But this year I had the idea to try and invent a…

  • Hemp Hearty Granola

Boy has it been a chilly one in Denver the past few days. Has any one else had trouble leaving their house in the snow? I love snow, don't get me wrong, and I grew up with lots of snow in Massachusetts, so I obviously own a vehicle that can dominate in the snow (a jeep, duh). I literally don't shovel my driveway (I never have) and just fly out of the driveway with my four wheel drive. Funny story actually, when I was going to college in Rhode Island I had an apartment that shared a driveway with three other people. At one point I had to borrow one…

  • Mango Summer Salsa

Tell me, what is better than a super ripe mango?! Especially in Mexico or on a tropical island. When I made this salsa I imagined eating it on the beach somewhere with a bowl of fresh made guacamole and a few lime wedges. Right?! Delicious. In reality, when I thought of this recipe idea I was roaming through the grocery store without my significant other (he likes to sprint through the store, I am more of a marathon wanderer when it comes to food shopping, I love to spend my own sweet time there). I stumbled upon a few very ripe mango and had the idea. I love eating raw…

  • Green Delicious Smoothie

Alright! Time for another smoothie. And to be specific, a Green Delicious Smoothie. See what I did there? Not a red delicious but a green delicious (this smoothie has nothing to do with apples). Sometimes I try to be more clever and funny than I actually am. My Mom is the only one who thinks I am funny, thanks Mom. Anyways, I am continuing my smoothie kick because why not?!? I feel like when I want something sweet but know I shouldn't have ice cream a smoothie is a good substitute. It's cold and creamy and can satisfy that sweet tooth. I am always trying to find ways to sneak…

  • Chocolate Peanut Butter Coconut Cups

So I first made these chocolate peanut butter coconut cups when I was reverse dieting from one of my fitness competitions. They satisfy the sweet tooth and you can make them in less than 5 minutes. Low carbohydrate and little to no sugar but they are still so delicious, I am into it. I found these great individual silicone baking cups and they work perfectly for a single serving size. They are also super easy to clean and you can toss them in the dishwasher and they are microwave safe which is a huge plus. FYI, one of my pet peeves is peanut butter with added sugar. I HATE IT.…

  • Kale Lemon Pistachio Salad

I love a good summer salad. Actually I am obsessed. When it's so hot outside I stay away from cooking indoors and tend to try to load up on fresh fruits and veggies. Any time I can make an excuse for adding various fruits and vegetables AND nuts into my salad, I am into it. Plus a little bit of fresh squeezed lemon?! Yes please. Whenever I go to the grocery store and day dream about all of the delicious recipe possibilities there are out. And I often find myself lost in the produce isle on Pinterest looking at recipe ideas. Anyone else? I feel like it is my life…

  • Peanut Butter + Berry Smoothie

Berry smoothies are my jam in the summer! I love anything that has peanut butter on it and this smoothie hits the spot with its frozen berries and nutty taste. I used a chocolate peanut butter protein powder that hits the spot. I have been eating them for breakfast or for a post workout snack. And they are truly a great replacement for ice cream. I paired them with my favorite fiber GG Scandinavian crackers. These fiber crackers don't taste like much of anything on their own but they sure taste good with a smoothie and some added peanut butter. I like to buy big bags of organic frozen fruit…
