Cashew Chocolate Chip Energy Balls

I am all about easy snacks on the go that are nutrient packed, and these cashew chocolate chip balls are absolutely amazing! They are full of natural ingredients, health fats and protein and of course carbs with added fiber. That means net carbs guys, yay!

I have been making energy balls for a few years now but this particular recipes I made for a networking event I did back in January. They were a huge hit. They didn't form quite as well as we liked but hey, sometimes you need a little more cashew butter. I've never tasted anything that had too much cashew butter.

I also used the mini size Enjoy Life Chocolate Chips (they are dairy free) and they are are delicious! They take a lot of the guilt out of eating chocolate chips for me (crickets)...

We ended up having to add a little more honey for them to stick together, but after that they were delicious. I like to refrigerate them and let them sit and bind for a little bit longer.

Cashew Chocolate Chip Energy Balls


Yield: 20-25 individual servings

 

Ingredients:

 

1 cup                           dry old fashioned oats

2/3 cup                        toasted coconut flakes

½ cup                          cashew butter

½ cup                          ground flaxseed

½ cup                          dark chocolate chips (or cocoa nibs)

2 tbsp                          chia seeds

1/3 cup                        honey or agave

1 teaspoon                  vanilla extract

 

Method of Preparation:

1.) Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.

2.) Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.

Makes about 20-25 balls.
